Apple and Goat Cheese Crumble
Served on MS Marina during our Caribbean cruise. 

Shrimp and Spinach Pastries
Japanese bakeries make an array of sweet and savory pastries, but it’s sometimes hard to tell which is which.  The shrimp were the clue here.  We had something like this for breakfast one day.

Beef Short Ribs in Chocolate Mole Sauce
We’ve served mole sauces before, but this one caught our attention on MS Marina.  Lion-san’s friend on the culinary staff gave us the recipe.

Caribbean Rice and Beans
The secret ingredients are coconut milk and whole habanero peppers.  The latter were removed before serving, but if you’re adventurous you may have one!  We actually ate this in Belize.

Baked Fish Icelandic Style
Icelandic Cod fillet with mustard cream and Havarti cheese

Brown Bread
Lacking a convenient thermal vent, we baked this overnight rather than steaming.  Use to sop up the fish sauce.

Green Salad with Tropical Fruits
Mango citrus vinaigrette dressing

Skyr Mousse
Skyr is Icelandic yogurt.  We’re serving this with blueberries and homemade salted caramel sauce.

Lemon Basil Tartlets
We had versions of Key Lime pie all over Florida, but we thought this flavor combination was more interesting..

Stroopwafels
Did we mention we were in the Netherlands this year, too?  Place the stroopwafel on top of your cup of coffee to soften the caramel before eating.
